I just want to be able to do things like play GC/Wii games on the Wii U without region locks (allowing me to remove my Wii) while still being able to actually play new games (I'm still deciding if I want to keep a Wii U on 5.3.2 and buy a new one for Tokyo Mirage Sessions or if I should just suck it up and upgrade ).

I don't think the state of the Wii U firmware affects anything to do with the Wii/GC side of things. You can probably get that stuff going ASAP, and deal with the Wii U side later.
The Wii side stuff has sometimes messed with Wii U updates in the past, don't know if that's been resolved. It probably has. I already have a hacked Wii and a pretty decent laptop with a good Dolphin setup , so I'm not really in a rush. I really should bite the bullet at some stuff.

I'd so very much love to get DS VC rom injection working on the Wii U. That's probably the main thing I'd like to see as a result of a kernel hack.
Edit: Or a capable homebrew DS emulator. I wonder if the Wii U would be able to handle a port of PPSSPP...

It is possible nowadays... in vulnerable firmwares. But it's completely possible once you get kernel access.
Funny thing: NWPlayer1234 (aka Twi) was testing injecting a DS Pokémon game (I think it was Black & White, or maybe HGSS) into the DS emulator for Wii U. It somehow triggered the anti-piracy protection Nintendo had implemented in the original releases.
It'd be completely natural to trigger Anti-Piracy in those games because they all have distinctive on cart hardware that its easy to check for that Nintendo would have no reason to work around (all those games have an extra IR chip for Pokewalker in the case of HGSS and for some of the pseudo-streetpass functions of BW). Also due to the extra hardware they have a somewhat unusual memory layout for the save area on the card. It'd actually be more surprising if those games didn't trip AP.

I checked gbatemp and it looks like the best thing available for it is Snake. Is it better off just waiting for this IOSU exploit?

Honestly, a kexploit doesn't offer much, really. At least not without people actively coding for it. I guess there are a few emulators out there, but Wii U backups is the main draw of having this exploit released publicly.
This is nothing like the 3DS. It's a kernel exploit, not IOSU. In other words, this is the Ninjhax of the Wii U, not the downgrade-to-install-CFW. You can have this set up in less than 5 minutes: put a few files in the SD card, install Java, run a command line, use the Wii U Internet browser to load the payload... presto.
As for playing Smash online, you still can, even with this hax, so...
Loading from Wii Mode isnt really a huge inconvenience but having direct loading from the WiiU for all software would be nice i suppose

Until we get IOSU and someone implements an emuNAND (or sysNAND with patched checks), we won't be able to launch anything from the Home menu itself. Even with this kexploit you still need to open the browser to load the Homebrew Launcher or the application you want to load. There's no icon for the application, like you have on 3DS.
