Depends on the games you play. http://www.computerbase.de/2016-05/geforce-gtx-1080-test/8/ 1080 with a 2500K vs 6700K, does make a big difference in XCOM2 and almost none in the other three titles.
go look on computerbase.deI want to see some 1080 OC'd benchmarks. Everything I've seen so far is stock

Anything that says how well the cards OC?
Double the performance of 970 at double (tripple at launch?) the price...
Meh :\
You can get the 20-30fps gains if you use 1080p benchmarks instead of 1440p.From HardOCP @ 1440P:
DOOM
GTX 1080 - 52 FPS
GTX 980 Ti - 41.9 FPS
Tom Clancy's The Division
GTX 1080 - 57.2 FPS
GTX 980 Ti - 45.1 FPS
Fallout 4
GTX 1080 - 73.4 FPS
GTX 980 Ti - 58.2 FPS
Witcher 3
GTX 1080 - 54.7 FPS
GTX 980 Ti - 44.5 FPS
The 1080 clearly averages 20-30% more performance than a 980 Ti. Pretty damn good but not 20-30 fps gains on average as you stated.
Need VR benchmarks....!
