Honestly, you seem to not draw a paralell between this behavior and ANY type of "not too mentally dumb an heavily frustrated people react to unknown situations" escalations. I would say that there is a *very* high chance that if a fat man would have "scared her kids" with the car sound or whatever, she would have come and went for the same tirade, replacing the n-word with "fatass", and that would have been that. Many who condemn her now would maybe get a shameful laugh out of her behavior, or even blame the "fattie", and that would be it.

Yet, it is not racism or fat-shaming that is the main motivator behind moves like this, but their general lifestyle and way of thinking, unability to control the egos when anything unexpected happens.

Imho, this is bullshit. You can have any proper, insanely loving dog to attack you if you push his strings enough. It is a scientifically demonstrated fact that humans are no different when it comes to degrading to states like that, should they feel threatened enough. The question is: what mental health is she working with in her everyday life that lets her jump on someone so easily? And "racism, inhumane shit" does not solve this. Getting professional help could.
