Here's my setups. They're not fancy, but they get the job done.

Consoles pictured: Atari 7800, TurboGrafx-16, NES (top loading), SNES, N64, GameCube, Wii, Wii U, Genesis with Sega CD and 32X add-ons, Saturn, Dreamcast, PlayStation 2, PlayStation 3, Xbox, Xbox 360, Xbox One
Consoles not pictured: Commodore 64, Master System, PlayStation
The Master System is sitting a few feet away. I don't have it hooked up at the moment because I don't have the space for it after I switched TV (my old one had a flatter top that let me place it on top of it), and also because I don't have the cables for it (I use the Genesis ones when I want to play it). The Commodore 64 isn't plugged in because I only have one game (Frogger) on it, and it takes up a lot of space. The PlayStation isn't hooked up because of backwards compatibility on PlayStation 2 and 3.
If you're wondering what that crazy tower thing behind the Genesis is...it's three different video selectors stacked on top of each other.
And if you're wondering what kind of video cables are being used:
-RF: Atari 7800, Commodore 64, NES, TurboGrafx-16
-Composite: Master System, Genesis/Sega CD/32X
-S-video: SNES, N64, GameCube, Wii, Saturn, Dreamcast
-Component: PlayStation 2, Xbox
-HDMI: PlayStation 3, Wii U, Xbox 360, Xbox One
The Wii isn't using component due to some issues with the output on mine with it.
