Going to be in another state for a couple of weeks, likely with only a tiny TV, so I'm thinking of picking up a Switch + LoZ, do I need the dock to charge the console or can I just pick up a USB cable? If it's the latter, what's best to charge it with? I have a couple of generic phone chargers, and I think an apple charger laying around somewhere. Would be much easier being able to leave the dock at home.

Yeah, they're modelled after the standard official case that was released at launch so they're built specifically for holding a Switch that has the Joycons attached.
I've been putting off buying a case - my Switch isn't travelling much as yet, I'm still finishing off DQ7 - but I'll need one in September. Hopefully that tablet-style case/stand is available over here by then, because that looks right up my street.
The what now?
Can charge it with the supplied USB-C Cable.

really the only reason the dock isnt a usb c breakout dongle is so nintendo can sell a product that "slots" into its "place" and then sell that "place" for 80$ per entertainment center in your house

Then what's stopping Nintendo from making their own dongle and still charging the 60 dollars (sans wall adapter).
A spiderweb of cables is exactly what people want next to their tvs.
