I wonder when Stars for Switch would release. Nintendo seems to be priming SMO as the big holiday game, while a Pokémon game, even a third version, would be a similar event in terms of size.

Going off of MHXX, the Switch & 3DS can apparently only do online cross-play.If they can't do local wireless between Switch and 3DS, then the chances of multiplatform release (or even a Switch-only release for that matter) are pretty low. Local multiplayer is Pokémon's bread and butter.

Because they always do this? Pokemon is rarely revealed at E3. Its an event as big as a new Rockstar game.

The same rumor that gave us Stars said it's a Switch game that was developed alongside the 3DS games. If it's Stars I would expect it to be Switch only.I guarantee you it's Stars. The only question now is, Switch, 3DS, or both? I'd love to be wrong but I can't see Stars being anything but a 3DS or 3DS/Switch game. It makes no sense for it to be a Switch exclusive when the Switch didn't even get Sun and Moon.
Again, the Black and White being released on DS post 3DS launch simply isn't a factor here - it ran on the 3DS too so wouldn't really effect sales. Nintendo won't want a Christmas where 3DS outsells Switch because it's got a Pokemon exclusive and that could feasibly happen I reckon.

I know it's inevitable that it's mainly a port of Sun/Moon but it would be crazy if they also revealed a sequel to this Pokemon game that plays like it on the switch:

The initial reports of them doubling production came in March, and some estimates put that process of ramping up production at taking around 4-5 months to really increase the available stock. The WSJ article about the NAND flash shortages was written in a way to suggest that they won't be able to hit their ~20m unit production target this FY, not their 10m unit guidance.
Right now the rate they're shipping corresponds to that 10m unit guidance, so once the actual increased production begins to show up we will see much higher shipments, and I'm estimating that'll be around July when Splatoon 2 releases, since they actually are releasing Switch bundles.
Also it's worth noting that Nintendo gets their NAND flash storage from both Toshiba and Samsung, so having two suppliers makes that a bit less of a constrained part than the WSJ article was making it out to be.
