Henderson's job in the team today was not to cover Gerrard imo

He was disappointing in his own right, but Gerrard is in the worst form of his career probably, and there's no light on the horizon. Henderson can't be the team's harrier, tackler, move-beginner, ball-carrier, defense-shielder and main midfield threat at the same time, no matter how big his engine is.

I think you're circling around the question without asking it, what is Henderson's best position and what is the best position for Liverpool to have him?

The second part of that I mean he probably does best as a RCM from his point of view, in terms of world football however will he ever be world class there? Don't see it personally as I have annoyingly mentioned a few times now (sorry). I think he has the tools to be a good or potentially very good DM, his reading of the game isn't top notch for me but as you say he has an engine and gets about well with some good tackles. Gerrard is gone now but could be a very good impact sub in the second striker role or out wide.

I would try something like this out when available for the middle/front:

Also, is there a special offside rule concerning the goal keeper?

A goal doesn't count if a player is offside and interferes with the keeper even though the player doesn't need to touch the ball, for example, blocking the keeper's sight or making moves that confuse him.

Does this rule not apply to defenders? Because for the second Mainz goal, the Mainz player (Hofmann) was clearly offside and forced Ginter to make a move (and thus the own goal). So, he interfered with our defender and that should be offside, right?

That's offside. My understanding is anything that interferes with the natural play is offside so obstructing vision or movement is offside if the player in question in the way was offside. The player doesn't need to touch the ball to be offside, even if he attempts the ball or gets in the way of a defender or goalkeeper he's automatically offside.
